Amaretto Chicken

Ingredients

2              Chicken Breasts
2              Eggs
1 bowl      Bread Crumbs
2 tsp         Slivered Almonds
4 shots      Amaretto
1/2 stick    Butter

Cut the chicken breasts into bite size pieces.  Mix the two eggs in a bowl.  Coat the pieces of chicken with the egg and then with the bread crumbs.  In a pan pour a little oil and bring the pan to heat.  Toss in the chicken and add some butter around the pan to help brown the chicken.  At first chicken will tend to stick to a pan but if you let it cook - once it is cooked it will automatically release from the pan.  At this point flop the chicken add a little bit more butter again to help with browning the other side.  Once the chicken is cooked set it aside in a serving bowl.  Bring the pan to high heat and toss in the almonds.  Once the almonds begin to toast add the Amaretto.  If you are using a gas stove it is quite likely the Amaretto will ignite so be prepared.  If you feel that the flame is out of control use a lid to cover the pan.  DO NOT USE WATER you will only make things worse.  Once the alcohol has burned off turn down the heat, add the 1/2 stick of butter and stir.  As soon the as the butter has melted pour the sauce over the chicken.
