Hot and Sweet Prawns

Ingredients

16         Medium to Large Prawns
1tsp       Hot Chili Sauce
2tsp       Soya Sauce
6-8tsp    Honey 

Peel the prawns - you can leave just the tail for effect if you wish.  Make sure you remove the vein from the middle of the prawn while removing the shell.  Place the prawns in a bowl and add the other ingredients.  Mix well with a spoon and let them marinade at least 15 minutes.  If the prawns are not pre-cooked heat a frying pan with some olive oil to as hot as you can get it without starting a fire.  In another words just as the oil starts to smoke.  Add the prawns without the marinade.  Cook the prawns on one side until they are just starting to brown.  As the prawns start to cook on their flip side add the marinade.  The marinade will reduce by the time the prawns are done on the flip side.  You can add a little butter to smooth out the sauce if you wish.  If the prawns are pre-cooked then heat a pan with a little olive oil (not too hot) and add the prawns and marinade all at the same time since all you want to do is to warm every thing through.
